Recipe Tips

Cut the sweet potatoes evenly: Keep the cubes around ¾ inch so they cook through at the same time.

Choose firm apples: Honeycrisp, Pink Lady, or Fuji apples hold their shape well while roasting.

Remove the silver skin: Trim the thin, tough membrane from the pork before cooking for the most tender results.

Use a meat thermometer: Pork tenderloin can dry out quickly, so remove it from the oven once it reaches 145°F.

Let the pork rest: Rest it for 5–10 minutes before slicing to help keep the juices inside.

Give everything room: Spread the vegetables out instead of crowding the pan so they roast and caramelize.

How to Store and Reheat

To store: Allow the leftovers to cool, then place the pork and roasted vegetables in an airtight container. Refrigerate for up to 3–4 days.

To reheat: Warm individual portions in the microwave until heated through. For larger portions, cover and reheat in a 350°F oven for 10–15 minutes. Add a small splash of broth or water to help keep the pork from drying out.

Frequently Asked Questions

No, the apples do not need to be peeled. The skin helps the wedges hold their shape, but you can peel them if your family prefers.

Yes. Prepare the glaze and chop the sweet potatoes and onion up to one day ahead. Cut the apples just before roasting so they do not turn brown.

Firm apples like Honeycrisp, Pink Lady, or Fuji work best because they hold their shape while roasting.
