Easy Crockpot Shredded BBQ Chicken

Ingredients

  • 1–1½ pounds boneless, skinless chicken breasts
  • ½ cup BBQ sauce
  • 2 tablespoons chicken broth or water
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. In a small bowl, whisk together the BBQ sauce, chicken broth, apple cider vinegar, garlic powder, onion powder, salt, and black pepper.
  3. Pour the sauce evenly over the chicken.
  4. Cover and cook on LOW for 5-6 hours or HIGH for 2–3 hours, until the chicken reaches an internal temperature of 165°F.
  5. Shred the chicken with two forks directly in the slow cooker.
  6. Stir the shredded chicken into the sauce and let it sit for 5–10 minutes before serving.

Notes

  • Cook on LOW for the most tender shredded chicken.
  • Add an extra ¼–½ cup of BBQ sauce after shredding if you like it extra saucy.
  • Chicken thighs can be substituted for chicken breasts.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
