Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 1 tbsp sugar optional
  • ½ cup 1 stick cold, grated butter
  • ¾ cup cold milk or buttermilk

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  3. Grate the cold butter directly into the dry ingredients. Toss lightly to coat.
  4. Pour in the milk gradually, stirring gently until the dough just comes together.
  5. Turn the dough onto a floured surface, pat it into a rectangle, and fold it over itself 2-3 times for flaky layers.
  6. Use a biscuit cutter or a glass to cut out rounds. Arrange them on the prepared baking sheet.
  7. Bake for 12-15 minutes, or until golden brown. Brush the tops with melted butter for extra flavor.

Notes

  • For the flakiest biscuits, make sure your butter is very cold before cutting it into the flour.
  • Avoid overmixing the dough—stir just until combined for soft, tender biscuits.
  • Folding the dough once or twice helps create flaky layers without extra work.
