Ingredients

  • 1 ½ cups old-fashioned oats
  • ½ cup nut butter peanut or almond
  • ¼ cup honey or maple syrup
  • 2 Tbsp butter melted
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • tsp nutmeg optional
  • Pinch of salt
  • 3 Tbsp mini chocolate chips or raisins optional

Instructions

  1. In a medium bowl, mix together the melted butter, nut butter, honey or maple syrup, vanilla, cinnamon, nutmeg (if using), and salt until smooth.
  2. Stir in the oats until fully coated and the mixture comes together.
  3. Fold in chocolate chips or raisins, if using.
  4. Chill the mixture in the refrigerator for 20–30 minutes to make rolling easier.
  5. Roll into 12–14 bite-sized balls.
  6. Store in the refrigerator or freezer until ready to enjoy.

Notes

  • Almond butter gives a more classic oatmeal cookie flavor, while peanut butter adds a richer taste.
  • If the mixture feels too sticky, add 1–2 tablespoons of oats.
  • If it feels too dry, mix in a teaspoon of honey or nut butter.
