Ingredients

  • 2 cups oats
  • 1 cup plain Greek yogurt
  • 3/4 cup peanut butter
  • 2 large eggs
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips optional

Instructions

  1. Preheat the oven to 350°F. Line an 8x8-inch baking dish with parchment paper.
  2. In a large mixing bowl, whisk together the Greek yogurt, peanut butter, eggs, maple syrup, and vanilla until smooth.
  3. Stir in the oats, cinnamon, baking powder, and salt until well combined.
  4. Fold in the chocolate chips, if using.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Bake for 25-30 minutes, or until the center is set and the edges are lightly golden.
  7. Allow the bars to cool completely before slicing into 9 squares.

Notes

Optional Peanut Butter Drizzle
For an extra delicious finish, whisk together:
  • 2 tablespoons peanut butter
  • 1 tablespoon maple syrup
  • 1-2 teaspoons milk
Warm slightly if needed and drizzle over the cooled bars before serving.
