Ingredients

  • 1 pound ground beef 85/15 recommended
  • 1/3 cup rolled oats blended into oat flour
  • 2 tablespoons milk
  • 1/4 cup grated parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground beef, blended oats, milk, parmesan, egg, garlic, onion powder, oregano, salt, and pepper.
  3. Mix gently with your hands until just combined. Do not overmix.
  4. Roll mixture into 1½-inch meatballs and place evenly spaced on the baking sheet.
  5. Bake for 18–20 minutes, or until the internal temperature reaches 160°F.
  6. Let rest 5 minutes before serving.

  • Use 85/15 ground beef for the most tender texture.
  • Blending the oats creates a smoother, classic meatball texture.
