Ingredients

  • 1.5-2 lbs boneless skinless chicken breasts or thighs
  • 2 cups frozen corn
  • 10 oz can diced tomatoes with green chilies
  • 4 oz cream cheese
  • ½ cup sour cream
  • ½ cup chicken broth
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • Juice of ½ lime

For serving:

  • ¼ cup chopped cilantro
  • ¼-½ cup cotija or feta cheese

Instructions

  1. Place chicken in the bottom of the slow cooker.
  2. Add corn, diced tomatoes, chicken broth, and spices.
  3. Place cream cheese on top (do not stir).
  4. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  5. Shred the chicken directly in the slow cooker.
  6. Stir until the cream cheese is fully incorporated.
  7. Stir in sour cream and lime juice.
  8. Top with cilantro and cheese, then serve.

Notes

  • Use chicken thighs for a richer, more tender result
  • Add dairy at the end for the best creamy texture
  • Let sit on warm for 10–15 minutes to thicken before serving
  • Easily adjust spice level to taste
