Ingredients

  • 2 cups rolled oats
  • 1 cup chopped nuts almonds, pecans, or walnuts
  • ½ cup unsweetened coconut flakes optional
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • cup honey or maple syrup
  • ¼ cup melted coconut oil or butter
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, nuts, coconut flakes, cinnamon, and salt.
  3. In a small bowl, whisk together honey (or maple syrup), melted coconut oil (or butter), and vanilla extract.
  4. Pour wet ingredients over dry ingredients and mix until evenly coated.
  5. Spread mixture onto the baking sheet, gently pressing it together to gather clumps.
  6. Bake for 20-25 minutes, stirring halfway through while keeping some clusters intact.
  7. Let granola sit undisturbed until fully cooled—it will crisp up as it cools.
  8. Store in an airtight container for up to two weeks.
