Ingredients

  • 1 lb chicken sausage sliced into rounds
  • 2-3 large russet potatoes diced into small cubes
  • 12 oz green beans trimmed
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ¾ teaspoon salt
  • ½ teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F and line a large sheet pan with parchment paper.
  2. Prepare the potatoes by dicing them into small cubes. Place them on the sheet pan and toss with half of the olive oil, half of the salt, pepper, garlic powder, onion powder, and smoked paprika.
  3. Roast the potatoes for 10 minutes to give them a head start.
  4. Add the sausage and green beans. Remove the pan from the oven and add the sliced chicken sausage and green beans. Drizzle with the remaining olive oil and seasonings, then toss everything together.
  5. Return to the oven and roast for 15–18 minutes, or until the potatoes are golden and crispy, the sausage is browned, and the green beans are tender.
  6. Serve warm.

  • Cut the potatoes into small cubes so they cook quickly.
  • Use a large sheet pan so the ingredients roast instead of steam.
