How to Make Slow Cooker Chicken and Gravy

Please see the recipe card at the bottom of this post for the full recipe details.

  1. Add the chicken: Place the diced onion and minced garlic in the bottom of your slow cooker. Arrange the chicken breasts or thighs on top.
  2. Mix the gravy base: Whisk together the chicken broth, Worcestershire sauce, parsley, garlic powder, onion powder, paprika, salt, and pepper.
  3. Pour it over the chicken: Pour the seasoned broth mixture into the slow cooker and place the butter on top of the chicken.
  4. Slow cook: Cover and cook on low for 5–6 hours or high for 3–4 hours, until the chicken is tender and reaches 165°F.
  5. Shred the chicken: Transfer the cooked chicken to a plate and shred it using two forks.
  6. Thicken the gravy: Whisk the corn starch and cold water together until smooth. Stir the mixture into the liquid in the slow cooker, cover, and cook on high for 10–15 minutes.
  7. Make it creamy: Stir in the heavy cream or whole milk, then return the shredded chicken to the slow cooker.
  8. Finish and serve: Allow everything to warm for another 5–10 minutes. Taste and adjust the salt and pepper before serving over mashed potatoes, rice, noodles, or biscuits.

Recipe Tips

Choose your favorite cut: Chicken breasts are lean, while chicken thighs provide a richer flavor and stay especially tender.

Don’t overcook the chicken: Begin checking it toward the lower end of the cooking time. It is ready when it reaches 165°F and shreds easily.

Use cold water for the slurry: Cornstarch blends best with cold water and creates a smooth, lump-free gravy.

Adjust the gravy thickness: Add another small corn starch slurry for thicker gravy or a splash of broth for thinner gravy.

Add the milk or cream last: Stirring it in at the end helps prevent curdling and keeps the gravy creamy.

Taste before adding more salt: The saltiness of chicken broth and Worcestershire sauce varies by brand.

How to Store and Reheat

Store leftover slow cooker chicken and gravy in an airtight container in the refrigerator for up to 4 days.

Reheat individual servings in the microwave until warmed through, stirring halfway. For larger portions, warm gently in a saucepan over medium-low heat, adding a splash of chicken broth or milk if the gravy becomes too thick.
