I could probably live off chicken salad for lunch (anyone else?) There is just something about the creamy, deliciousness and knowing I can make it healthier at home makes my mind wander about all the different combination possibilities. Who doesn’t love ranch and chicken. It is pretty much a match made in heaven. So why not make it into chicken salad you’ll be grabbing for everyday for lunch. Greek yogurt is one of my favorite ingredients to add to make anything more protein-packed. This recipe delivers on protein and flavor.   2. Add the chicken. Stir in the cooked, shredded or diced chicken until completely coated in the dressing.
  3. Add the crunch. Fold in the diced celery and shredded cheddar cheese, if using.
  4. Chill the chicken salad. Cover and refrigerate for at least 30 minutes. This gives the homemade ranch flavors time to come together.
