  • Crispy rice cereal: Gives the bars their light and crispy texture.
  • Unflavored gelatin: Creates that soft, chewy marshmallow texture.
  • Cane sugar: Sweetens the bars and forms the homemade marshmallow base.
  • Water: Blooms the gelatin and helps dissolve the sugar.
  • Butter: Adds rich, buttery flavor and keeps the bars soft.
  • Vanilla extract: Adds a little warmth and homemade sweetness.
  • Sea salt: Balances the sweetness and brings out all the flavors.

How to Make Homemade Crispy Rice Cereal Bars

Please see the recipe card at the bottom of this post for the full recipe details

  1. Prepare the Pan. Line an 8×8-inch baking pan with parchment paper and lightly butter it. This makes it easy to lift the bars from the pan once they have set.
  2. Prepare the Cereal. Place the crispy rice cereal in a large mixing bowl. Pour the melted butter over the cereal and gently toss until evenly coated. Set aside while you make the marshmallow mixture.
  3. Bloom the Gelatin. Pour half of the cold water into the bowl of a stand mixer or a large mixing bowl. Sprinkle the gelatin evenly over the water and let it sit for 5–10 minutes. I like to whisk it all together.
  4. Make the Sugar Syrup. Add the cane sugar and remaining water to a small saucepan. Stir gently to combine, then bring the mixture to a steady boil over medium heat. Once it begins boiling, do not stir.
  5. Check the Syrup. Let the syrup boil for about 5 minutes, then drop a small amount into a cup of very cold water. The syrup is ready when you can gather it into a soft, pliable ball that easily flattens between your fingers. If it dissolves in the water, continue boiling for 30 seconds before testing again.
  6. Whip the Marshmallow Mixture. With the mixer running on low, carefully pour the hot syrup into the bloomed gelatin. Increase the speed to high and beat for 3–5 minutes, until the mixture is white, thick, and glossy but still soft enough to pour. Mix in the vanilla and sea salt.
  7. Combine with the Cereal. Immediately pour the warm marshmallow mixture over the buttered cereal. Gently fold everything together until the cereal is evenly coated.
  8. Press and Set. Transfer the mixture to the prepared pan. Use buttered hands, a spatula, or a piece of parchment paper to gently press it into an even layer. Avoid packing it too firmly, which can make the bars hard.

Let the bars set at room temperature for about 1 hour before lifting them from the pan and slicing.

Recipe Tips

Have everything ready: The marshmallow mixture sets quickly, so prepare your pan and cereal first.

Don’t stir the boiling syrup: Stirring can cause the cane sugar to crystallize.

Watch the syrup closely: Overcooking it can make the finished bars hard.

Don’t overwhip: The marshmallow should be thick and glossy but still easy to pour.

Work quickly: Fold in the cereal as soon as the marshmallow mixture is ready.

Press gently: Packing the mixture firmly into the pan can create dense, hard bars.

How to Store

Store the crispy rice cereal bars in an airtight container at room temperature for up to 3 days. Place parchment paper between the layers to prevent sticking, and avoid refrigerating them since the cold can make the bars firm and the cereal less crispy.

The gelatin gives the homemade marshmallow its soft, chewy texture. Leaving it out will create a firmer, crunchier bar rather than a classic chewy cereal treat.

Yes. They are best made one day ahead and stored tightly covered at room temperature until you are ready to serve them.

No. A hand mixer and a large heat-safe mixing bowl will work. Carefully pour in the hot syrup and begin mixing on low to prevent splashing.
