How to Make Slow Cooker Creamy Cheddar Chicken & Potato Soup

Please see the recipe card at the bottom of this post for the full recipe details

  1. Add Ingredients to the Slow Cooker. Add the chicken breasts, diced potatoes, carrots, onion, garlic, chicken bone broth, butter, and seasonings to your slow cooker. Give everything a gentle stir.
  2. Let It Cook. Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until the chicken is fully cooked and the potatoes are fork-tender.
  3. Shred the Chicken. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  4. Make It Extra Creamy. Scoop out about 1 cup of the tender potatoes with a little broth. Mash them with a fork and stir them back into the soup. This helps naturally thicken the broth while keeping it nice and soupy!
  5. Add the Creamy, Cheesy Goodness. Turn the slow cooker to LOW or WARM. Stir in the softened cream cheese and heavy cream until smooth. Gradually add the freshly shredded cheddar and Parmesan, stirring until everything is melted and creamy.
  6. Serve & Enjoy! Give everything a final stir, taste, and adjust seasonings if needed. Serve warm !

Recipe Tips

Use Yucon Gold Potatoes: They’re naturally buttery, creamy, and hold up so well in this soup!

Shred Your Own Cheese: It melts so much better and gives you that delicious, creamy broth.

Soften Your Cream Cheese: This little step helps everything melt together nice.

Keep the Heat Low: Once you add the creamy goodness, avoid letting the soup boil.

Make It Your Own: If you love a brothier soup you can add a little extra chicken broth until it’s just how you like it!

Don’t Forget to Taste: A little extra salt or pepper at the end can bring all those delicious flavors together.

How to Store and Reheat

To Store: Let the soup cool slightly before transferring it to an airtight container. Store in the refrigerator for up to 3–4 days.

To Reheat: Warm leftovers in a saucepan over low heat, stirring occasionally until heated through. Add a splash of chicken broth or milk if the soup has thickened in the fridge. You can also reheat individual portions in the microwave.

Frequently Asked Questions

If you prefer a thicker soup, simply mash a few extra potatoes and stir them back into the broth. This naturally thickens everything without needing flour!

Yes! I love Yukon Gold potatoes for their naturally buttery flavor, but russet or red potatoes will work too. Just keep in mind that russets tend to break down a little more as they cook.

Absolutely! This soup makes wonderful leftovers. Store it in the refrigerator and gently reheat with a splash of chicken broth to bring back that creamy, soupy goodness.
