How to Make Quick and Nourishing Chicken Soup
Please see the recipe card at the bottom of this post for the full recipe details.

1. Prep the Vegetables and Chicken
Slice the carrots, celery, and dice the onion. Mince the garlic. If using large chicken thighs or breasts, cut them into bite-sized pieces or leave them whole to shred later.

2. Sauté the Vegetables
In a large pot, melt the butter over medium heat. Add the diced onion, sliced carrots, and celery. Sauté for 5-7 minutes until the vegetables are softened. Add the minced garlic and cook for another minute until fragrant.

3. Add the Chicken
Place the chicken in the pot with the vegetables. Season with salt and pepper.

4. Pour in the Bone Broth
Add the chicken bone broth to the pot, ensuring the chicken is submerged. Add the parmesan rind for added flavor. Bring the soup to a boil.

5. Simmer the Soup
Once boiling, reduce the heat to low. Cover and let the soup simmer for 25-30 minutes until the chicken is cooked through and the flavors meld together.

6. Shred or Chop the Chicken
Remove the chicken from the pot and shred it with two forks or chop into bite-sized pieces. Return the chicken to the pot and stir.
7. Serve with Toppings
Remove and discard the parmesan rind. Ladle the soup into bowls and top with freshly grated parmesan cheese. Garnish with fresh parsley, some diced jalapeño, or a squeeze of lemon if desired.

Recipe Tips
Make It Heartier: Stir in cooked rice, small pasta, or even diced potatoes to make this soup extra filling.
Add Creaminess: A splash of heavy cream or half-and-half adds richness and a cozy, creamy finish.
Turn Up the Heat: Add hot sauce or red pepper flakes for a gentle kick of warmth.
Boost the Protein: Stir in extra shredded chicken or crack in a whisked egg for added nourishment.
Fresh Finish: A squeeze of lemon juice or a handful of fresh herbs brightens the flavors right before serving.
Taste & Adjust: Always finish with an extra pinch of salt and pepper—soups come alive at the end.
How to Store
Refrigerator: Let the soup cool completely, then store in an airtight container in the fridge for up to 4–5 days.
Freezer: This soup freezes well! Store in freezer-safe containers or bags for up to 3 months. If adding cream, freeze before adding and stir it in when reheating.
How to Reheat
Stovetop: Reheat gently over medium-low heat, stirring occasionally, until warmed through. Add a splash of broth or water if needed.
Microwave: Heat in a microwave-safe bowl in 30–60 second intervals, stirring between each, until hot.
From Frozen: Thaw overnight in the fridge or reheat slowly on the stovetop until fully warmed.
