How to Make Slow Cooker Corn Chicken

Place the chicken breasts (or thighs) in the bottom of your slow cooker. Add the frozen corn, diced tomatoes with green chilies, chicken broth, and all of the spices right on top. Place the block of cream cheese on top. Don’t stir—it will melt down as it cooks and create a creamy sauce.

2. Cook until tender
Cover and cook on: LOW for 6–7 hours, or HIGH for 3–4 hours. The chicken should be fully cooked and tender enough to shred easily.

3. Shred the chicken
Use two forks to shred the chicken directly in the slow cooker. It should fall apart easily and mix into the corn and sauce. Stir everything together until the cream cheese is fully incorporated and the sauce is smooth and creamy.
