How to Make Cheesy Chicken Broccoli Casserole
Please see the recipe card at the bottom of this post for the full recipe details
- Preheat the oven. Preheat your oven to 375°F and lightly grease a 9×13-inch baking dish.
- Add everything to the pan. Add the uncooked rice, bite-size chicken pieces, frozen broccoli, chicken broth, milk, melted butter, garlic, garlic powder, onion powder, paprika, salt, pepper, 1 cup of cheddar cheese, and Parmesan directly to the baking dish.
- Stir it together. Gently stir everything until well combined, making sure the rice is mostly covered by the liquid.
- Cover tightly. Cover the casserole dish tightly with foil. This is important because the trapped steam helps the rice cook properly.
- Bake. Bake covered for 50–60 minutes, or until the rice is tender and the chicken is fully cooked to 165°F.
- Add the cheesy topping. Carefully remove the foil, give the casserole a gentle stir, and sprinkle the remaining cheddar cheese over the top.
- Finish baking. Return the casserole to the oven uncovered for another 5–10 minutes, until the cheese is melted and bubbly.
- Let it rest. Allow the casserole to rest for 5–10 minutes before serving so everything can thicken up and come together.
Recipe Tips
Use long-grain white rice. This recipe is written for regular uncooked long-grain white rice. Brown rice, instant rice, and others will need different amounts of liquid and cook time.
Cut the chicken small. Keep the chicken pieces around ¾- to 1-inch so they cook through evenly while the rice bakes.
Keep the broccoli frozen. There’s no need to thaw it first. Adding it straight from the freezer helps keep the recipe truly dump-and-bake.
Cover the dish tightly. This is one of the most important steps. The trapped steam is what helps the rice cook properly, so make sure the foil is sealed well around the pan.
Shred your own cheese if you can. Freshly shredded cheddar melts more smoothly and gives the casserole the best creamy, cheesy texture.
Check the rice before uncovering. If the rice is still a little firm after 50 minutes, cover it back up and give it another 5–10 minutes.
Let it rest before serving. A short rest helps the extra liquid absorb and gives the casserole that cozy, creamy texture.
Season to taste. Broths and cheeses can vary in saltiness, so taste before adding extra salt at the end.
How to Store and Reheat
To store: Let the casserole cool completely, then transfer leftovers to an airtight container or cover the baking dish tightly. Store in the refrigerator for up to 3–4 days.
To reheat: Warm individual portions in the microwave until heated through. You can also reheat a larger portion in a 350°F oven, covered with foil, until warm.
To keep it from drying out you can add a small splash of milk or chicken broth before reheating to bring back some of that creamy texture.
