The result is tender, flavorful beef that requires very little prep and can be served on warm sandwich rolls, over mashed potatoes, or alongside rice. How to Make Slow Cooker Italian Beef

  1. Prepare the slow cooker: Add the sliced onion to the bottom of your slow cooker, then place the beef roast on top.
  2. Add the cooking liquid: Pour the beef broth, Worcestershire sauce, and pepperoncini juice around the roast.
  3. Season the beef: Sprinkle the parsley, dill, chives, garlic powder, onion powder, paprika, salt, and black pepper evenly over the meat.
  4. Add the remaining ingredients: Add the minced garlic and pepperoncinis around the roast. Place the butter on top of the beef.
  5. Cook until tender: Cover and cook on LOW for 7–9 hours, until the beef is tender and easily pulls apart.
  6. Slice or shred the beef: Transfer the cooked beef to a cutting board and let it rest for about 10 minutes. Shred it with two forks or slice it thinly against the grain.

Don’t rush the cooking time: If the beef is difficult to shred, it likely needs more time. Continue cooking until it pulls apart easily.

Adjust the pepperoncinis: Use fewer pepperoncinis and less juice for a milder flavor, or add more if your family enjoys the tanginess.

Let the beef soak: Return the sliced or shredded beef to the slow cooker for at least 15 minutes so it can absorb the flavorful juices.
