This Easy Sweet Buffalo Sauce is thick, buttery, and perfectly sweet with just the right kick. It comes together in minutes using simple pantry ingredients and tastes better than anything store-bought.

I am a bit of a wing snob well more like a buffalo sauce snob. My mom use to make a sweet buffalo sauce for our chicken bites growing up and I knew I needed to recreate this recipe but I wanted to make it a bit thicker for dipping as opposed to just coating. This sauce has such a sweetness but slight spice to it that is delicious paired with ranch or on its own. You will be wanting to use it on everything!

How to Make the Sweet Buffalo Sauce
Please see the recipe card at the bottom of this post for the full recipe details.

1. Melt the butter.
Add the butter to a small saucepan and melt over medium-low heat so it doesn’t brown.

2. Make a quick roux.
Whisk in the flour and cook for 1 minute, whisking constantly, until smooth. This prevents a raw flour taste.

3. Slowly whisk in the hot sauce.
Pour in the hot sauce a little at a time while whisking, so the sauce stays silky with no lumps.

4. Add the sweet + seasonings.
Whisk in the brown sugar, honey (if using), garlic powder, and smoked paprika.

5. Simmer until thick and glossy.
Bring it to a gentle simmer (not a hard boil) and cook for 3–5 minutes, whisking often, until it thickens.

6. Let it sit for a minute.
Remove from heat and let it rest 2 minutes—it thickens even more as it cools.
7. Taste and adjust.
Taste and add a pinch of salt if needed, or an extra spoonful of brown sugar if you want it sweeter.

Recipe Tips
Keep the heat low. Cooking over medium-low prevents the butter from separating and keeps the sauce smooth.
Whisk constantly when adding the hot sauce. This keeps the flour-based sauce lump-free and silky.
Don’t boil the sauce. A gentle simmer thickens it without breaking the sauce.
Let it rest before using. The sauce thickens even more as it cools for the perfect cling.
Adjust sweetness to taste. Add an extra tablespoon of brown sugar if you like it sweeter.
For thicker sauce, cook slightly longer. A few extra minutes gives you a stickier, glaze-like finish.
How to Store & Reheat
Let the sauce cool completely. Transfer to an airtight container or glass jar. Store in the refrigerator for up to 5 days. The sauce will thicken as it chills — this is normal.
Reheat gently in a small saucepan over low heat, whisking until smooth. Add 1–2 teaspoons of water or butter if needed to loosen the sauce. Avoid microwaving on high, as it can cause the sauce to separate.
This sauce is perfect for meal prep — make it ahead and reheat just before tossing with wings or chicken.
