Looking for a quick and delicious way to start your day? These fluffy high-protein scrambled eggs with cottage cheese are ultra-creamy, packed with nutrients, and ready in just minutes!

I am always trying to add more protein to my day. Eggs are one of my favorite protein sources because they house so many incredible nutrients. Then I decided to jump on the cottage cheese bandwagon- ya’ll this is something my dad ate when I was growing up and I said yuck. Turns out it’s not so bad and when you mix it in with the eggs you get an extra protein punch alongside some creamy eggs. The best of all the worlds!

Family-friendly: My kids never even know that they are getting extra protein from the cottage cheese. They just love the fluffy eggs.

How to Make Fluffy High-Protein Scrambled Eggs

Step 1: Whisk the Eggs & Cottage Cheese

Beat the eggs and cottage cheese together until smooth. You will still have clumps of cottage cheese that is alright it will help with making the eggs creamy.

Step 2: Heat the Pan

Heat your pan over low heat. Make sure your pan is heated enough. Then melt the butter in the skillet.

Step 3: Cook Slowly

Pour in the egg mixture into the pan and gently stir with a spatula.

Step 4: Soft & Creamy Scramble

Continue to cook on low heat until just set and creamy.

Step 5: Season & Serve

Sprinkle with salt, pepper, and chives. Enjoy!

  • Low & slow cooking: Make sure to avoid high heat to keep the eggs soft and creamy.
  • Whisk well: The cottage cheese blends better when fully mixed into the eggs.

  • Don’t overcook!: Remove from heat when still slightly soft for perfect fluffiness.

Frequently Asked Questions

Can I use different cheese instead of cottage cheese?

Yes! You could use Ricotta or cream cheese for the added creaminess to the eggs. You may not be adding as much extra protein though.

Is this recipe good for meal prep?

I wouldn’t suggest using this recipe for a meal-prep as scrambled eggs are best fresh and this recipe is so quick to make. If you do just reheat on low until warm.

Can I make this dairy-free?

Yes! Just swap out the butter for ghee and then pick your favorite dairy-free cheese alternative to add creaminess to your eggs.

Ingredients
  

  • 3 large eggs
  • ¼ cup cottage cheese full-fat for best texture
  • ½ tbsp butter or ghee
  • ⅛ tsp salt or to taste
  • ⅛ tsp black pepper optional
  • Chopped chives or parsley for garnish optional

Method
 

  1. In a bowl, whisk together the eggs and cottage cheese until smooth.
  2. Heat skillet over low to medium-low heat.
  3. Melt the butter in a skillet.
  4. Pour in the egg mixture and let it sit for a few seconds. Gently stir with a spatula, moving the eggs from the edges toward the center.
