Then I decided to jump on the cottage cheese bandwagon- ya’ll this is something my dad ate when I was growing up and I said yuck. Turns out it’s not so bad and when you mix it in with the eggs you get an extra protein punch alongside some creamy eggs. The best of all the worlds!

Step 1: Whisk the Eggs & Cottage Cheese
Beat the eggs and cottage cheese together until smooth. You will still have clumps of cottage cheese that is alright it will help with making the eggs creamy.

Step 2: Heat the Pan
Heat your pan over low heat. Make sure your pan is heated enough. Then melt the butter in the skillet.

Step 3: Cook Slowly
Pour in the egg mixture into the pan and gently stir with a spatula. Continue to cook on low heat until just set and creamy.

Step 5: Season & Serve
Sprinkle with salt, pepper, and chives. Enjoy!
