But as a busy homeschooling mama, our mornings aren’t always slow, so I wanted something that still felt like a comforting bakery-style treat while being easy enough for on-the-go mornings.

2. Make the crumb topping
In a small bowl combine the flour, brown sugar, cinnamon, and a pinch of salt. Pour in the melted butter and stir with a fork until crumbs form. Set aside.

3. Mix the cinnamon sugar layer
In another small bowl mix together the brown sugar and cinnamon. This will create the cozy cinnamon swirl inside the muffins.

4. Combine the dry ingredients
In a large mixing bowl whisk together: flour, brown sugar, cane sugar, baking powder, baking soda, salt, and cinnamon.

5. Mix the wet ingredients
In a separate bowl whisk together: melted butter, eggs, milk, Greek yogurt, and vanilla extract. Mix until smooth and well combined.

6. Make the muffin batter
Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix, as this keeps the muffins soft and tender.

7. Assemble the muffins
Fill each muffin liner about halfway with batter. Sprinkle a small spoonful of the cinnamon sugar mixture on top. Add another spoonful of batter, filling the muffin cups about ¾ full. Generously sprinkle the buttery crumb topping over each muffin.

8. Bake
Bake for 18–22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
